What I Eat In a Day (Healthy)

I’ve seen quite a few of these What I eat in a day posts/videos lately, so I figured why not do one myself? Along with drinking more  water, I’ve also been trying to eat a lot healthier. I’ve been meal planning every week, and I’ve been doing great at it so far!



Breakfast 9 am: Pumpkin flax granola with almond milk


For breakfast I like to eat eggs, bacon, hash browns, and buttered toast. Something heavy, hearty, and greasy that will fill me up in no time. So to eat a bowl of granola and almond milk- I wasn’t that thrilled. Fortunately though, this granola is so so good! I haven’t had much time to make my own granola so this is the next best thing. It’s light but also filling at the same time, and it has a nice crunch.



Lunch 1 pm: Chilli Lime Quinoa Salad


Ingredients:                                                           Dressing:

1 cup quinoa                                                          1/2 cup fresh lime juice

1 cup diced, seeded cucumber                           1 tbsp chilli powder

1 cup diced red bell pepper                                 Chopped fresh parsley

1 cup diced green bell pepper

1/4 diced green onions

1/4 cup finely diced red onion

Cook quinoa until cooked through then mix everything up in bowl, and serve!


This quinoa salad tasted great because of the fresh lime juice mixed with the chilli powder. It’s a nice light lunch. You can also add in chopped chicken breast or canned tuna to make it more of a meal.



Dinner 6:30 pm: Brown Rice, Roasted Sweet Potatoes, Baked Chicken


Sweet potatoes are still not the greatest thing I’ve ever eaten, but I’m learning to love them. I like to roast them in the oven with olive oil and chilli powder. (And yes, I burnt them). I marinated the chicken breasts in a mixture of lemon juice, chilli powder, and a little bit of olive oil, then baked it in the oven. It was so so flavourful. Also apparently this day I was obsessed with chilli powder.



At 10 am I had apple slices, and around 3 pm I had some carrots dipped in hummus.
