Greek Orzo Salad

For some reason lately I have been OBSESSED with orzo and I have no idea why! I found some in the back of my cupboard a little while back and I’ve eaten it almost everyday. Mostly in pasta salad forms. This one by far is my favourite that I’ve made. Pasta salad is my absolute favourite thing to eat on a summer day. Speaking of summer-it fully feels like summer here- no more spring, it’s been like 3o degrees(celsius) here everyday and I can hardly handle it. I almost can’t wait for winter! Anyways, let’s start making some orzo salad.

Ingredients for salad:                                              

2 cups uncooked orzo

1 cup diced green bell pepper

1 cup diced red bell pepper

1 cup diced cucumber

1/4 cup diced red onion

LOTS of feta cheese


This is orzo, it looks like large rice but its a pasta-I think. And it only takes like 4 seconds to cook.



Just boil in salted water until cooked. Drain it and rinse it to keep it cool.



Dice up all your vegetables, and you can add in those gross olive things if you’d like. Oh and I like to dice my red onion small, I can’t handle big chunks of red onion.



Add the veggies to your cooked orzo.



Then add in a bunch of feta cheese. (I added a lot more after this, I love love love feta cheese)

Okay now onto the salad dressing. I found the recipe here, and it is so so simple to make. It only takes a good 12 seconds.

Ingredients for the Salad Dressing:

1 garlic clove, minced

1/2 cup extra virgin olive oil

1/4 cup fresh lemon juice

1 teaspoon dried oregano

1/2 teaspoon kosher salt

Black pepper


Just add all the ingredients into a jar, shake it up and you’re good to go!



Pour the dressing over the salad and mix everything together. This salad was really really tasty, so make sure you make it soon! Add some diced grilled chicken breast to make this a full meal. Or serve it along side a nice juicy steak. Enjoy this!
