My obsession with orzo just grows and grows. I honestly still can’t get enough of it. So I decided to make a taco salad version. First this greek orzo salad, now Mexican, what’s next? But seriously this stuff tastes EXACTLY like a taco in a bowl.
This recipe makes quite a lot, so feel free to halve it.
2 cups uncooked orzo
1 pound ground chicken (or turkey)
1 packet taco Seasoning
1-2 cups diced grape tomatoes
1/2 cup green onions
1-2 cups grated cheddar cheese
1 cup ranch dressing
1/4- 1/2 cup taco sauce
Start off by cooking your orzo in boiling salted water for abut 8- 10 minutes. Drain, then rinse and set aside. Meanwhile cook your ground chicken and add your taco seasoning. Once the chicken is cooked all the way through add it to your orzo. Dice up the tomatoes and green onions and add them in. Also add in your grated cheese. In a small bowl mix together your ranch dressing and taco sauce. Pour dressing over everything and mix to combine. Add a little parsley for garnish and serve!
For the dressing you can use sour cream instead of the ranch for a lighter flavour. You can eat this cold or warm, it’s up to you. You can also serve this with tortilla chips, or over some lettuce. Or add in some beans for a heartier salad.
