Energy balls just do not sound appetizing to me. But these little balls of goodness are just that. Little balls of goodness. Actually they’re really delicious, and when they’re frozen they’re a crunchy little treat. Honestly I can’t stop at one. I found this recipe in a recipe box of mine that I don’t use, and I have no idea where the recipe came from but it was written on an old folded up napkin, so it must be important.
Anyways, I think these energy balls are so delicious because of the peanut butter in them. I can seriously go through a jar of peanut butter in one sitting, I love it so much. Also flaxseeds, for some reason I like them?
1 cup quick oats 1/2 cup peanut butter
1/2 tablespoon flaxseed 1/2 cup chocolate chips
1/3 cup honey 1 tablespoon chia seeds
1 teaspoon vanilla
Throw all the ingredients into a bowl and mix everything together with a wooden spoon, or in a mixer. Stick the bowl in the fridge for 3o minutes. Wash your hands, then roll the mixture into bite size balls, and place onto a cookie sheet.
Flash freeze them on the cookie sheet for 10-15 minutes, then put into freezer bags. And eat them just like that. You can also roll the balls into shredded coconut, or crushed up nuts before you freeze them, that would be so so good.
*Other things you can add to the mixture: chopped nuts, dried fruit, mini chocolate chips, mini M&M’s, shredded coconut, sunflower seeds. Or switch up the peanut butter and use almond butter instead. The list goes on and on.
I also usually make at least a double batch, sometimes I make two double batches, or three double batches, or four…. you get the idea. Enjoy these, and make them soon!
